Pantry staple ingredients make a comforting soup!
- crushed tomato cans 2 14oz cans
- yellow or sweet onion (thinly sliced) 1 large
- garlic (minced) 2 cloves
- extra virgin olive oil 2 tablespoons
- crushed red pepper (optional) 1/4 teaspoon
- water 1 cup
- better than bouillon chicken base 1 teaspoon
- cane sugar 2 teaspoons
- dried oregano 1/4 teaspoon
- kosher salt one generous pinch + 1/2 teaspoon
- freshly ground black pepper 1/2 teaspoon
- heavy cream 1/2 cup
- fresh Italian parsley (minced) for garnich

Oil in a Dutch oven (3 1/2qt) over medium heat.

Add onion, garlic, red pepper and salt.

Cook until onion gets softened (10 mins). Stir occasionally.

Add tomato/water/bouillon/sugar/oregano/salt and pepper.

Bring to a boil, reduce to simmer, cover and cook 10mins.

Uncover and use an immersion blender at desired consistency.

Add heavy cream, simmer once more.

Taste, add salt and pepper as needed.
