Pantry staple ingredients make a comforting soup!

  1. crushed tomato cans 2 14oz cans
  2. yellow or sweet onion (thinly sliced) 1 large
  3. garlic (minced) 2 cloves
  4. extra virgin olive oil 2 tablespoons
  5. crushed red pepper (optional) 1/4 teaspoon
  6. water 1 cup
  7. better than bouillon chicken base 1 teaspoon
  8. cane sugar 2 teaspoons
  9. dried oregano 1/4 teaspoon
  10. kosher salt one generous pinch + 1/2 teaspoon
  11. freshly ground black pepper 1/2 teaspoon
  12. heavy cream 1/2 cup
  13. fresh Italian parsley (minced) for garnich

作り方

    Oil in a Dutch oven (3 1/2qt) over medium heat.

    Add onion, garlic, red pepper and salt.

    Cook until onion gets softened (10 mins). Stir occasionally.

    Add tomato/water/bouillon/sugar/oregano/salt and pepper.

    Bring to a boil, reduce to simmer, cover and cook 10mins.

    Uncover and use an immersion blender at desired consistency.

    Add heavy cream, simmer once more.

    Taste, add salt and pepper as needed.

    Serve with homemade croutons (ID : 20984837) 🙂

コツ・ポイントThese tomato cans don’t have sodium, so adjust your seasoning accordingly.
