- Burdock (if any) 1 stalk
- Water 1/2 cup
- Sugar 2 tbsp
- Mirin 2 tbsp
- Soy sauce 3 tbsp
- Sake 2 tbsp

Place the halibut fillet on paper towel and sprinkle salt.

Add the ingredients for soup in a flat pan

After 10mins, wipe off the moisture of the fillet
