The umami from the tuna makes a well balanced okra salad!

  1. okra 8-10
  2. kosher salt
  3. shallot (thinly sliced) 1 medium
  4. tuna can 1 (80 g)
  5. fresh Italian parsley (roughly chopped) 1/4 cup
  6. ↑ (It goes well shiso herbs too!)
  7. for the dressing:
  8. avocado oil 2 tablespoons
  9. lemon juice 1 tablespoon
  10. raw apple cider vinegar 1 teaspoon
  11. raw agave nectar 1 teaspoon
  12. sea salt 1/8 teaspoon
  13. freshly ground black pepper to taste

    Chop cooked okra into bite sized pieces.

    In a mixing bowl, whisk in all dressing ingredients.

    Add okra, tuna, shallots and parsley. Toss well.

    Chill for at least 1 hour before serving!.
