One of the simplest side dishes in Japan!

- okra 8-10
- kosher salt
- For the dressing:
- noodle soup base ID : 20771992 2 tablespoons
- cane sugar 2 teaspoons
- roasted ground sesame seeds 4 tablespoons

Cut off the stem end of the okra.

Peel off the edge of the calyx with a knife.

NOTE: This prevents the water from getting in the okra.

Place the okra on the cutting board.

Sprinkle kosher salt over the okras.

Rub okra gently back and forth against the cutting board.

OR place the okra into a colander and sprinkle salt over it

Gently rub them against each other to remove the fuzzy skin.

NOTE: This helps to remove the fuzzy skin from the surface →

and brings out a bright green after cooking it.

Bring water to a boil in a medium pot or pan.

Put in the okras into a pot (without removing the salt).

Blanch for 1.5-2 mins (flip okra at times to evenly cook).

Transfer the okra to a colander.

Run cool water over the okra and drain well.

Tap with a paper towel to remove excess moisture.

Chop into bite sized pieces.

Combine all the sauce ingredients in a mixing bowl.

Add okra into a bowl and toss well.
