Lime vinaigrette goes well with cilantro slaw!

I make coleslaw as a side/topping for sandwiches. This recipe also works both ways, and adds a refreshing aftertaste!
材料
- green cabbage (thinly sliced) 1/2 small (4-5 cups)
- carrot (peeled and shredded) 1 medium (1/2 cup)
- cilantro (roughly chopped) 1 cup
- shallot (thinly sliced) 1 medium
- For the dressing:
- extra virgin olive oil 4 tablespoons
- lime juice 3 tablespoons
- cane sugar 1 tablespoon
- sea salt 1/2 teaspoon
- freshly ground black pepper 1/4 teaspoon
- garlic (finely minced) 1 clove

Get ready for all the veggies!

In a large bowl, whisk in all the dressing/garlic.

Stir in all the veggies, toss well.

Refrigerate at least 1/2 hour to allow flavors to blend.

Refrigerate the coleslaw in an airtight container for it to last for 3-5 days.
