Promising and crowd pleasing chocolate cupcake recipe!

- unsweetened Dutch-processed cocoa powder 50 g
- hot water 1/2 cup
- light brown sugar 100 g
- cane sugar 100 g
- egg (at room temperature) 1 large
- grape seed oil 1/2 cup
- butter milk (at room temperature) 1/4 cup
- pure vanila extract 2 teaspoons
- all-purpose flour 150 g
- baking powder 1 teaspoon
- baking soda 1/2 teaspoon
- fine sea salt 1/2 teaspoon

Line a 12 cup muffin pan with cupcake liners.

Preheat the oven to 350 degrees F.

Whisk the flour/baking powder and soda/salt in a medium bowl

Add cocoa powder in a large heat safe bowl.

Add hot water and whisk until combined.

Add both sugars and whisk to combine.

Add egg and whisk to combine.

Add grape seed oil and whisk to combine.

Add butter milk and vanilla, then whisk until smooth.

Add dry ingredients and whisk until just about combined.

The batter should be thin, so make sure there’s no dry flour

Pour the batter and fill the muffin pan until about 3/4 full

Bake for 18-22 minutes.

NOTE: a toothpick inserted inside should come out clean.

Allow it to cool completely before adding frosting.
