Blue cheese & acacia honey make a good combination!

- Cream Cheese 300 g
- Blue Cheese 150 g
- Cake flour 50 g
- Acacia Honey 120 ml
- Egg 2
- Heavy cream 200 ml
- Lemon juice 20 ml
- White rum 10 ml
- Raisins 100 g
- Toppings
- Cream cheese 100 g
- Blue cheese 50 g
- Acacia honey *for cheese mix 20 ml
- Raisins 50 g
- Walnuts 50 g
- Acacia honey *for drizzle to taste

Cream cheese & blue cheese at room temperature.

Knead well with a spatula.

Add cake flour and knead well.

Add acacia honey and mix well.

Make beaten eggs, add to the cake mixture, and mix well.

Add heavy cream and mix well.

Add lemon juice.

Add white rum and mix well.

Pre-heat the oven to 180℃.

Pour the 1/3 cake mixture into the baking tray.

Place raisins on it.

Pour the left 2/3 cake mixture into the baking tray.

Lightly drop the tray few times to make the surface even.

Pour 1/3 water in the grill tray for steam baking.

Place a foil over the trays.

Bake at 180℃ for 25 mins, and then remove the foil.

Bake again another 25 mins at 180℃.

Cool it down.

Do not touch the cake, it’s easy to break.

Wrap with foil and put in the refrigerator to chill.

Put cream cheese & blue cheese in a container.

Add acacia honey and mix lightly. Keep in the refrigerator.

Slice a piece of cake and put on a plate.
